Peanut Butter Smoothie Bowl

Betsy Earle

Yield: 2 servings

The trick to making a smoothie into a bowl is blending until you have a texture closer to soft serve than to a traditional smoothie. For this bowl, use Greek yogurt, frozen bananas and ice to create a satisfying bowl that will leave you full for hours. If you're in the camp that thinks peanut butter tastes better with a little chocolate, add in a tablespoon or two of cocoa powder and top the bowl off with a generous handful of cacao nibs.

Time: 10 minutes

Ingredients:

  • 1 cup unsweetened almond milk

  • 1 cup ice

  • 1/2 cup fat-free plain Greek yogurt

  • 1/4 cup creamy peanut butter

  • 1 tablespoon chia seeds

  • 1 teaspoon vanilla extract

  • 2 frozen bananas, chopped into chunks

  • Kosher salt (if peanut butter is unsalted)

  • Suggested toppings: chopped almonds, sliced bananas, cacao nibs, chia seeds, hemp seeds, peanut butter drizzle

Instructions:

  1. Put the almond milk, ice, yogurt, peanut butter, chia seeds, vanilla, bananas and a pinch of salt, if using, in a blender and puree until creamy and smooth, 2 to 3 minutes.

  2. Pour into individual bowls and sprinkle with toppings of your choice.
