Goat Cheese-Tomato Toast

Yield: 2 servings

Whip up this goat cheese–tomato toast to enjoy the fresh flavors of summer any time of the year. This sweet-and-savory combo makes a perfect breakfast, lunch or snack. For an extra burst of flavor, drizzle with balsamic glaze or sprinkle with crushed red pepper for a little heat. You could also drizzle with a bit of honey and sprinkle with some fresh herbs like basil or mint.

Time: 10 minutes


Ingredients:

  • 2 ounces goat cheese (about 3 tablespoons)

  • 2 slices crusty whole-grain bread, toasted

  • 1 small heirloom tomato, sliced

  • 1 teaspoon extra-virgin olive oil

  • Pinch of flaky sea salt

  • Pinch of freshly ground black pepper

  • Fresh basil for garnish (optional)


Instructions:

  1. Spread 2 ounces goat cheese evenly on 2 toast slices.

  2. Top each with half the tomato slices; drizzle with 1 teaspoon oil and season with a pinch each salt and pepper.

  3. Garnish with basil, if desired.
