Crunchy Avocado-Lime Salad

Time: 15 minutes


Ingredients:

  • 1/2 cup goat cheese crumbles

  • 1/3 cup roasted, salted pumpkin seeds (pepitas)

  • 1/4 cup chopped fresh cilantro

  • 3 tablespoons lime juice

  • 1 cup 365 Organic Tortilla Strips (optional)

  • 1 large ripe avocado, diced

  • 1 head romaine lettuce, chopped

  • 1/4 cup sliced pitted black olives

  • 1/2 teaspoon kosher salt

  • 1/2 cup chopped radish (about 3 medium)

  • 1 tablespoon extra-virgin olive oil


Instructions:

  1. In a large salad bowl, use a fork to smash avocado with salt. Stir in lime juice and olive oil.

  2. Add lettuce and toss to combine, then add goat cheese, cilantro, olives and pumpkin seeds.

  3. Divide among salad plates and top with tortilla strips (if using) to serve.
